Healthy Southwestern Black Bean Salad


Looking for a healthy snack or a healthy side for a meal? I just made this Healthy Southwestern Black Bean Salad and its quite yummy.

Here’s what you’ll need to make it:

  • 16oz can Black Beans (rinse and drain)
  • 16oz can Red Kidney Beans (rise and drain)
  •  8oz can Sweet Yellow Corn (drain)
  • 1/4 Bunch of Cilantro
  • 1/4 cut Red Onion
  • 1/2 Lime
  • 3 tbs Olive Oil
  • 1 cut Roma Tomato
  • Dash of Salt & Pepper
  • DIRECTIONS: Take the beans, corn, cilantro, onion and tomato and put it in a mixing bowl. Squeeze the lime into the bowl and add olive oil, salt and pepper Mix Everything together and that’s it! You can eat it right away or chill it in the fridge. You can also add some avocado.

The Healthy Way: Change for Variety


Sometimes all you need is a little change. I’ve been struggling with eating healthy lately- not because I don’t want to eat healthy but because I get tired of eating the same healthy foods day after day. So its time to change things up!

I’ve probably typed words “healthy recipes” in my google search bar a million times. The results are always lacking to say the least. The “healthy recipes” I’ve found are usually boring or they are recipes that are not really healthy.

I’m not a cook.  I can be a disaster in the kitchen. But its time for me to take some chances and to be creative in the kitchen. After all, the worst that can happen is that I’ll make something disgusting and have to resort to eating a sandwhich. I’ll hope for the best and share the recipes if they work!
